I want to say hello to all my friends in Corinth who have sent some real nice letters recently about some of my recipes that they saw in their local grocery stores. Your letters are very kind and I wish you all happy eating. This week I have a Pepper Steak recipe' that will melt in your mouth. My neighbors here in McNairy County say that this is one of their favorites. I fixed this for my husband, and I have to say that he was so happy. He asked me to fix it again twice. It is a very yummy recipe'!!!!! Okay, here is the recipe' that will make you a legend in your own time.
This is what you need.... Ingredients 2 Pounds of beef sirloin, cut into 2 inch strips 1/2 cup of chopped onion garlic powder to taste 2 large bell peppers, chopped 3 tablespoons of vegetable oil 1 can of stewed tomatoes 1 cube of beef broth or liquid broth 3 tablespoons of soy sauce 1/4 cup of hot water 1 teaspoon of white sugar 1 tablespoon of cornstarch 1 teaspoon of salt Here's what I do to fix this great heart warming meal. Get that slow-cooker out and plug it in. Sprinkle strips of sirloin with the garlic powder to taste. In a large skillet over medium heat, put in your vegetable oil and brown the seasoned beef strips. Then go ahead and transfer the strips to the slow cooker. Mix the beef broth with the hot water and then mix in cornstarch until it is completely dissolved. Pour this mixture into the slow cooker with the seasoned meat. Stir in the onion, green peppers, stewed tomatoes, soy sauce, sugar and salt. Put that cover on the slow cooker and cook on high for 3 to 4 hours...or on low for 6 to 8 hours. This will serve 6 or 2 very hungry people. It will take about 20 minutes to prepare this delicious meal. My husband likes mashed potatoes to go with this main dish but sometimes I fix white rice. Green beans will also be good but any vegetable of your choosing will work here. My husband and I usually have a good Merlot wine with this meal. I usually have a glass or two while it's cooking.
